Description

A culmination of the late lunch is the " second course" (drugie danie). Actually, it is what is commonly understood as a first course (or main) in English, but Poles call it the second (the soup goes first). Polish recipes for first courses are listed in a table above, while a short list of some popular foods served as seconds is below: This is a professional cookbook that is quite technical. The introduction covers the following topics: why did the Polish government regulate sausages, why did we make better sausages before, the glory years of Polish sausages, and the history of sausages. Chapter One focuses on the importance of the Christmas and Easter holidays, the history of sausages (the Middle Ages), the glory years of Polish sausages, the European certificates of origin, and the mystery of Polish sausages. Chapter Two discusses meat selection, curing, methods, and the difference between American and European curing techniques from the USA to Malta.

It’s said to be an American adaptation of Uniwersalna Ksiazka Kucharska! What impressed me the most was the bakery section, OH MY GOD! The almond streusel Challah is to die for! Worth the price of the book. This and many other recipes have pictures of the procedures and the final product. The next Polish recipe book I added to my collection was Wielka Ksiega Nalewek, the Big Book of Tinctures; it is written in Polish. My copy is from 2011, but there are multiple versions out there. This book was recommended to us by our friend Slawek. He mentioned it when we sampled his homemade raspberry liqueur, Maliniak. This book has convinced me that Poles have made an art form of steeping anything and everything in vodka. I’ve made several of the liqueurs. It’s a classic and must have if you enjoy sipping something yummy after dinner that is, of course, good for the digestion.

The Absolute Best Polish Cookbooks - Polish Foodies

This book is perfect for anyone who intends to make Polish sausages or any kind of sausage. Even Polish butchers that make sausages all over the world make this book a point of reference. It is very scientific and appeals to the general public interested in sausage making or those in the “sausage trade.” Review 📖 The photography is great, and the instructions are well-written. I loved reading little tidbits about his family traditions. My one quibble: I really didn't want to know how much the author "hates raisins;" he mentions it at least twice. I guess he really doesn't like raisins! If you want to enjoy hearty asparagus risotto or goat cheese pierogi, get the Fresh from Poland cookbook! 7. Polish Cookery: Poland’s Bestselling Cookbook Adapted for American KitchensI am truly inspired. This is not the old fashioned Polish cooking I grew up with but a modern progression of Polish cooking through the use of different combinations and spices, but not out in left-field.
