I assume I don’t have to mention to take the rolls out of the bin bag and remove the cling film first. Furthermore, it has got many of their favorite ingredients such as cherry tomatoes, walnuts, apple and raisins. Weigh out the margarine, wrap it in a piece of tin foil and place in the freezer for 30 minutes to harden up. One of my favourites is sliced aubergine spread with pasta sauce and grated cheese, (I use a smoked cheese) baked until crispy.

Delia's best-selling books have always included a number of delicious vegetarian recipes but now, for the first time, they have been gathered together in one irresistible volume. No one one should be flummoxed by producing a few non meat meals these days- I’d recommend Bosh books for starters but they have a free online recipes too. I say ‘cook’, he usually heats something up, unless he’s making a roast (unfortunately, although he makes a fantastic roast dinner, he refuses to make one in the warmer months) but this Bank Holiday weekend, I was treated to a proper homecooked dinner, courtesy of Delia Smith’s Vegetarian Collection. Beloved British cook, TV presenter and bestselling author of 24 cookbooks, Delia Smith has delighted the nation with her recipes and kitchen charisma for over five decades.It’s a clever idea, especially because chestnut puree is now fairly easy to come by in large supermarkets, but for me it needs more than onion, garlic and seasoning to compete with sausage meat. Cheese will do that job perfectly, of course, as well as adding fat, so if you use it, fold in grated hard cheese of your choice to taste (about 50g should do, but it will vary depending on strength; you’ll need less mature cheddar than red leicester, for example). Towards the end of the decade Delia commenced work on a new major project - Delia's How to Cook, publishing three separate volumes and the accompanying TV series. This book is not only for those who dont eat meat or fish but also for those who find themselves wanting to cater for vegetarians.

I find her to be a deeply-patronising humourless example of the worst of Middle England Daily Mail unpleasantness and I absolutely refuse to use her recipes or watch her witchy face on television. There are ideas for soups, starters and salads, as well as egg recipes, dishes with cheese, breads, pizzas, baking, puddings, to name but a few. Take the sausages out of their casings, add the onion and mush up with your hands until well incorporated (vegetarian sausages have a very firm texture so this can be quite hard work but when you add the onion the whole mixture will start to soften up). Delia does seem to make recipes overly complicated sometimes, once I've tried them I often find corners I can cut, or ingredients like egg that are fine left out. The photographs were beautiful but I always wonder why there are photos of ingredients when not every recipe is depicted.Stir until it’s all coated with flour, then add just enough very cold water (three or four tablespoons should do it) to bring the mix together into a smooth dough.

Roll the filling up in the pastry like a bug in a rug, as Young recommends, rather than folding over in the more traditional but also more fiddly fashion, then brush with milk or egg, sprinkle with a few seeds to make it party ready, and you’ll have a sausage roll that everyone but the dog will enjoy. The problem is that plant-based meats are incredibly low in fat, and cook to a crisp, leaving the filling sadly dry and, in this case, bland – I can’t detect much in the way of flavour from the “mince”.Soy sauce is a popular vegan alternative, and makes an appearance in both Elliot’s and Young’s versions, with the latter also adding miso paste for an extra hit of savoury flavour; Bosh, meanwhile, use nutritional yeast, which always reminds me, not unpleasantly, of Quavers. When you take the butter out of the freezer, open it up and use some of the foil to hold the end with. Turn out onto a floured surface and knead for about 6 minutes by which time you should have a smooth elastic dough. Start by roasting cut up peppers ,courgettes ,whole mushrooms and tomatoes in a covered pan at 180 for about 45 minutes . Make up the dressing by whisking all the ingredients together in a bowl, then pour into a serving jug. Delia is clearly not very veggie savvy - not only are there a lot of cheese and egg recipes (although there's a list at the back of vegan recipes) but a lot of the cheeses she suggests using are not vegetarian!Eggs Florentine is a good breakfast too and my very favourite (usually in Hotels) is smoked haddock topped with a poached egg. This is a classic veggie recipe, it requires quite a bit of time to make as there are numerous stages involved, though it’s certainly not difficult. Spoon half the filling into a rough sausage shape down one of the long sides of the pastry, then paint the opposite long side with egg or milk.
