The same could be said of cool-climate wines from Trentodoc in northern Italy or indeed for cooler areas in Austria. Excitement comes from Spain, with Catalunya and Castilla-La Mancha showing nicely with either the traditional Cava grape varieties of Xarel.lo, Macabeo, and Parellada, or as blends with the more ‘modern’ style incorporating Chardonnay or Pinot Noir. With so much excitement and diversity, it is hardly surprising that sparkling wines are enduringly popular. White Sparkling Brut (12g/l or lower) Winery Cava heeft zich in de loop der jaren weten te ontwikkelen tot een serieus en betaalbaar alternatief voor Champagne. De wijnen worden op dezelfde manier gemaakt, met een tweede gisting op fles, om hun bijzondere belletjes te krijgen. The mainstay Cava grape varieties include Macabeo, Parellada, and Xarel-lo. Macabeo, also known as Viura, lends pleasant aromatics to the blend, while Parellada adds acidity and finesse. Xarel-lo is the grape that gives body, earth and greengage characteristics to Cava. Occasionally Chardonnay is used as a blending grape or sole variety in making Cava wine. Governmental inclusion approval was awarded in 1986 but still, Chardonnay makes up only a fraction of total vineyard area. For rosé, in Spanish called rosado, the local Trepat and Garnacha can be used, along with Pinot Noir (first permitted in 1998 for rosado and in 2007 for white Cavas). White sparklings dominated, but there were also some lovely rosés. In both colours, the better sparkling wines shone with star-bright brilliance, lovely definition and elegance. Jaume Serra Cava Gold is mooi bleekgeel van kleur. Dit is een cava met een stevige mousse, maar de belletjes blijven heel fijn. Lekker aromatisch en fris. In de smaak rond en zacht, levendig en goede zuren. Aangenaam wit fruit, met citrus en appel. Heerlijk verfrissend, mooie mousserende wijn. Jaume Serra Cava Gold is heerlijk bij gerookte vis. Bijvoorbeeld makreelsalade met appel en kappertjes op toast.

Since Cava is a sparkling wine produced on the Mediterranean where temperatures are warmer and there is more sunshine compared with Champagne, you can expect that Cava sparkling wine will generally have a gentler acid profile compared with its French counterpart. Furthermore, especially when the indigenous varieties are used, common Cava flavors will include citrus peel, fennel, wildflower, lemon blossom and flint or saline. Most Cava is produced in the Brut style, so dry, with a slightly rounder finish that balances brightness with brioche notes and supple fruit. Brut Nature or Zero Dosage examples are bone dry, whereas Extra-Dry Cava will be slightly sweet and a Demi-Sec Cava will have the highest sweetness level. The 2023 competition was judged on 10 May at Ibis Styles, London Bridge, London, employing experienced judges.
