About this deal

Dingle Distillery is an Irish whiskey distillery established in 2012 [4] and billing itself as an 'artisan' distillery. [5] The distillery is located in a converted sawmill in Milltown on the outskirts of Dingle, [4] [6] in a Gaeltacht (Irish-speaking region) in the southwest of Ireland. The first whiskeys distilled and matured at the distillery were released in late 2016. [7] In addition to whiskey, the distillery also produces and markets Dingle vodka and Dingle Gin. Nose: Initial faint smell of liquorice and aniseed, some fruitiness, less strawberries and more zesty limes, really fresh. Lots of sweetness, too; some After Eights and fizzy cola bottles drift into the nostrils. With the number of operating distilleries in the country having fallen to just two in the 1980s, Ireland now boasts sixteen operating distilleries, with many others planned. When it opened, the Dingle Distillery was Ireland's fifth, joining the New Midleton Distillery (where Jameson, Powers and Paddy are produced, among others), Bushmills, Cooley, and Kilbeggan. Single Malt Batch 1 – The first in the Single Malt series, Single Malt Batch 1 took the best Irish malted barley to make pure pot still malt whiskey which was then matured exclusively in Bourbon casks. Single Malt Batch 1 was released in 2016 and had 7,500 bottles produced with an ABV of 46.5%. The Dingle Whiskey Cask Strength of this release had 500 bottles produced with an ABV of 60.7%. It has been my pleasure to be a part of Single Malt Batch 6 distilling process. Our Single Malt Batch 6 is fully matured exclusively in Tawny Port Casks, Batch 6 is a great of example of the interaction between Single Malt spirit and Fortified wine. A whiskey with multiple layers of sweetness and a well-balanced depth of flavour. It really is a must try, even more so as it is the last in the series. Dingle have been the trailblazers of the Irish whiskey revival and were the first of the new breed of distillers to start making whiskey. Now they have come of age and finally have some whiskey ready to drink. Thei first release was a single cask of the 2nd barrel to be filled at the distillery, which sold out rapidly. Even marginal fans of Irish whiskey know that the category has been in full-blown rebirth since the turn of the 21st century. Hit hard by the struggle for Irish independence and American Prohibition, the industry was slow to recover, dwindling to a microcosm of an industry by 1980. At the time, Oliver Hughes and Liam LaHart, the founders of Dingle Distillery, were busy with their first venture: Porterhouse Brewing Company, a craft beer importer and chain of pubs. As they and their palates matured, their interest turned to whiskey. In 2012, they chose Dingle for its beauty, romance and temperate air and took over the defunct Fitzgerald saw mill to house the operation. The duo outfitted it with three custom pot stills built by the storied Forsyths Ltd of Scotland, while also making use of a well tapped an aquifer 240 feet below the old mill to fill traditional wooden fermentation vessels. This marked a turning point for Irish spirits as this was the first purpose-built distillery in the country in 100 years. There is also a series of limited edition whiskies in homage to the Celtic cycle of the year. It is called "Wheel of the Year" and so far includes the following bottlings: Taste – Full on fruit and spice. Waffles laced with syrup, redcurrant jelly, crushed cranberries, gingerbread, and dark chocolate.

Single Malt Batch 5 – Single Malt Batch 5 was matured in ex-Bourbon, Pedro Ximenez and Madeira casks. I’m partly speaking tongue in cheek here, as distillers/blenders will only bottle it when it’s ready… surely? There are so many fundamental questions determining the right time for distilleries to sell their own whiskey, with the majority concerning the actual whiskey, i.e., taste, smell, colour, etc. The bottle and presentation are visually attractive. What I am interested to know is whether their newest and first-ever core expression single malt is a product of lessons learnt, a knee-jerk reaction to an increasingly overpopulated market of distilleries bottling their own spirit, or a happy coincidence of fully matured whiskey delivered at the right time. As for the whiskey itself: it is comprised of mainly six- to seven-year-old spirit and has been matured in PX Sherry (61%) and Bourbon (39%) first-fill casks. Head distiller Graham Coull claims to be using first-fill only casks to produce a richer flavour, something which we will perhaps come across when sampling the actual liquid. As Ireland was coming out of its greatest recession in modern memory, Oliver Hughes, Liam Hart, and Peter Mosley quietly started up their craft whiskey distillery. In a tin shed in the town of Dingle, County Kerry, Ireland, on December 18th of 2012, the first Dingle Whiskey Casks were filled. On December 19th, 2015, the first cask was released; cask no. 2. And the Dingle Whiskey Distillery was now official.
