Third generation maestro mezcalero, Mezcal artist since the age of 8, is a master of the craft, bringing unparalleled knowledge and skill to the production of our mezcal. As the name suggests, the Espadin expression (42% ABV) is made from espadin agave. To make the mezcal, piñas from the agave plants are cooked in earthen pits to release sugars, before being crushed using a tahona wheel. After fermenting for seven to 10 days, the mezcal is distilled in copper stills.
