Chill the cake in the refrigerator for 10 minutes until the icing slightly hardens and then decorate the top of the cake with the lemon and lime zest. A few bits and pieces like cuttlefish, whole octopus and guanciale may take a bit of effort, but you should have no problems for 90 per cent of the dishes with the remainder requiring a decent fishmonger or deli. Remove them from the pan, then add the vegetables and brown them over a medium heat for about 10 minutes.
