Pour the Guinness into a large wide saucepan, add the butter — in spoons or slices — and heat until the butter's melted, at which time you should whisk in the cocoa and sugar. Beat the sour cream with the eggs and vanilla and then pour into the brown, buttery, beery pan and finally whisk in the flour and bicarb. Truffles are minimal in ingredients, so make sure to start with a high quality chocolate and one that is preferably at least 60% cacao. The quality of the chocolate will heavily impact the flavor. Guinness Dark Chocolate Truffles

This recipe is particularly easy because it does not require tempering. However, if you’re feeling ambitious you can definitely skip the cocoa powder coating and enrobe your truffles in tempered chocolate instead! These Guinness chocolates are quite soft at room temperature due to the amount of beer in them. So store them in the fridge and bring them out just before you want to serve them. How many Guinness chocolate truffles does this make? Be sure to choose a good-quality couverture (such as Callebaut or Valrhona) for this recipe, rather than grocery store chocolate chips. These truffles are also a fantastic way to use up all of the “odds and ends” of leftover chocolate left over from other recipes, or chocolate that has been previously tempered. Take a teaspoon and make small balls out of the truffle mix and press down slightly to make them into little patties on a tray lined with baking parchment.
