While Cream is a term used to describe a sweet style of sherry, Pale Cream – as the name suggests – is defined by its delicate, pale colour. With a great marketing vision, this entrepreneur named these sweet wines from the south of Spain “Bristol Milk”, because they were offered as the best possible food for newborn babies and mothers of young children. All sherry is fortified – a process which increases the alcohol content – and aged in oak casks for a minimum of two years, but often for much longer.

Drink this sherry from Spain ideally well chilled at 8 - 10°C as a companion to blackberry cream dessert, pear-lime strudel or banana trifle in a glass. Inevitably these dense, heavy, mahogany-coloured wines took on a feminine connotation, which did not please English gentlemen.
