OK, now I’m done stomping my foot over Dozer ruining my photos, a quick word on this Apple Cake recipe: It’s crazy easy and fast to make the batter, it’s made with FRESH apples (won’t work with canned, cake isnot as moist), and it really is beautifully moist.

I used half quick oats half regular, but would use all regular oats for a bit more crunch next time I think. Love this traditional recipe because it lends itself to variations with the fruit depending on what’s in season. Remove the skin, using a sharp paring knife or a vegetable peeler, core the apple, and cut into uniform slices. I find that the extra light syrup is sweet without being overly so and that it doesn’t mask the natural sweetness of the apples. Starting with too much headspace isn’t any different in a technical sense, so you can just pretend that was “liquid loss” in the canner.

I also like to include a crafty mason jar recipe tag with instructions for how to make a simple dessert using canned apple slices.It’s sweet but not exceedingly so, and it matches the sweetness of the apples without covering up any of the fruit’s bright flavor profile.
