There is another series of books by The Curry Guy, Dam Toomes which are also good, but I prefer the base sauce from Misty Ricardo and have had better results with his recipes. The ONLY exception to that in just a few recipes for baking where I may use nonstick spray for the pan and for pancakes, nonstick spray for the pan. However, it is worth noting that most measurements in the US/Canadian edition are in cups and teaspoons, and a conversion chart has been included in the book.

Food photography is bright, bold and very Hasan, with lots of shots taken outside, and many featuring Hasan with his friends and family. There’s Grandma’s Parkin, Lemon Meringue Pie, Lokma (doughnut-like fried dough balls), Ricotta and Semolina Cake, Sutlac (Turkish rice pudding), and Künefe Adana (transforming classic künefe into dessert on a stick), and Pistachio Tart. James Martin took over as host from 24 June 2006 when Antony Worrall Thompson left the BBC to present Saturday Cooks! Now I still don’t know what that was, exactly, but when I checked the pot 10 minutes later, there beans were woefully undercooked. I share this because it helped me immensely and hopefully it can help others, regardless of what type of book.The difference is you spend an hour cooking down all of the onions, which makes for a richer and more complex base. And finally, Something To Finish promises a delicious treat to end the meal, with recipes spanning British, Italian and Cypriot Classics. Stopping to ask why is the book’s specialty and it reveals all kinds of intriguing and unexpected facts about why certain things work and don’t work in the kitchen. Most cooks and restaurant owners will offer this title on their shortlist of the most important or most influential cookbooks on the market.

It’s pretty much mandatory reading for most culinary programs and includes more than 200 innovative recipes. Personally, I love this recipe by Edd Kimber and over the years I have made it my own by adding a few twiddles along the way (the tiramisù competition judges might accept some of these additions into their creative option). The Italy chapter starts with two dough recipes (Rich Egg Yolk Pasta and Semolina Pasta), and then dishes such as Cacio e Pepe, Crab Tagliatelle, Spinach and Ricotta Mezzelune, Fennel Sausage Ragu and Cavatelli, Lobster Ravioli and Bisque, Ragu and Papardelle, Pork Shoulder and ‘Nduja Ragu, and Rotolo. Like all good things, this one took more time than I thought it would, because you bake the tomato sauce in the oven for about 30 minutes, but it was worth the wait.
