There is another series of books by The Curry Guy, Dam Toomes which are also good, but I prefer the base sauce from Misty Ricardo and have had better results with his recipes. The ONLY exception to that in just a few recipes for baking where I may use nonstick spray for the pan and for pancakes, nonstick spray for the pan. The Italy chapter starts with two dough recipes (Rich Egg Yolk Pasta and Semolina Pasta), and then dishes such as Cacio e Pepe, Crab Tagliatelle, Spinach and Ricotta Mezzelune, Fennel Sausage Ragu and Cavatelli, Lobster Ravioli and Bisque, Ragu and Papardelle, Pork Shoulder and ‘Nduja Ragu, and Rotolo. Like all good things, this one took more time than I thought it would, because you bake the tomato sauce in the oven for about 30 minutes, but it was worth the wait.
