Cucumber: Any cucumber will work, but the absolute best variety to use in this cucumber martini is an English cucumber. They're also known as "hot house" or "seedless cucumbers", which is a bit of a misnomer given they do contain seeds. Their seeds, however, are much smaller than regular cucumbers, which makes for a smoother purée. They also have little to no bitterness.

Simple syrup: Using a liquid sweetener makes dissolving the sugar in your cucumber drink easier. Make your own simple syrup with an equal portion of water and sugar, then heat on the stove until it dissolves. You can also use a little bit of agave syrup or any other liquid sweetener you prefer. This traditional Mexican drink is also called Agua Fresca de Pepino or Cucumber Agua Fresca (aka Cucumber Fresh Water). It’s made by blending the cucumbers with water and adding just a touch of sweetener. In Mexico, it’s a popular drink served by street vendors! First and foremost, make the cucumber juice. Peel the cucumbers, and toss them into the blender. Blend for a minute or so, until well combined, then strain into a pitcher. Voila! You’ve got cucumber juice. 🙂 Add the sugar and water to a saucepan, stir to mix a bit, then put the heat on medium high. Bring to a boil, simmer for a minute. Remove from the heat and add the cucumber, both the peel and the chunks. Let cool to room temperature, strain into a jar, and refrigerate. [I have seen a suggestion to let this stand in the fridge overnight before straining to get the maximum cucumber flavor but I don’t think this is actually necessary; a couple of hours cooling to room temperature seems to work just fine.] Experiment with other herbs. Replace the mint with basil for more herbal notes. You can also steep your simple syrup with some dried lavender and mix it into the cucumber water.
