I have found the most beautiful serving spoon ever. It comes from the famous Italian design house Alessi, and it is made for serving risotto. There is something about its design that is hard to describe, but it just is the perfect shape to serve a risotto. Use the spoon to create perfect classic risottos of mushroom or asparagus, or try making Arroz Negro - a Spanish risotto-like rice dish coloured with cuttlefish ink. Today, like most types of forks, spoons are made from metal, though wooden or plastic spoons are also still common in many homes. The majority of the time, most people will use just one or two types of spoons on a regular basis, but there are many types of spoons for specific purposes that you may not even realize exist. The Italian risotto par excellence is risotto alla milanese. To prepare it, finely chop the onion and sauté in a pan over medium heat with butter. Add ossobuco (ox bone marrow) if you’d like. Toast the rice on high heat for one minute, stirring continuously. Add white wine and let it evaporate. Pour in the hot broth a little at a time, stirring occasionally. Cook the rice for about 16-20 minutes, according to the chosen rice, adding two sachets of saffron halfway through cooking. Salt if necessary. Remove the pan from the heat, add cold butter and grated parmesan cheese. Stir until the risotto is soft and creamy. Let rest for a minute with the lid on and serve.
