It will be fine Gee - I also read the weight of the tin of sliced Peaches - thought it was too much so I ate a few before chopping the rest! I love that the directions are very easy to follow and the cakes are simple to make they can even be done by kids. The perfect blondie is crisp, chewy and fudgy all at the same time, with a sweet butterscotch flavour coming from the combination of brown sugar and vanilla. No messing about with piping bags which I've never really got the hang of, so these are a winner with my family already.

Take out of the oven and rest for 10 minutes to allow the top of the cheesecake to become level and flat.

I haven't actually managed to bake any cakes from this book so far but i have read it from cover to cover. A bestseller of its time, many families are still baking with it now, but 37 years on, Mary Berry has completely revised and updated this much-loved book. Mary has incorporated her 'all-in-one' method of preparation into as many recipes as possible, so her recipes are faster to make than ever.In addition to the easy tray bakes and family cakes there are some recipes to interest the seasoned baker such as battenberg cake, or my favorite brandy snaps that need to be rolled around a wooden spoon while still warm to achieve their tube-like form, ready for filling with cream! Measure all the ingredients for the cake into a large mixing bowl and beat with an electric mixer until well blended and smooth. My mum gave me this book and it doesn't even look as if this paperback was ever opened, it's her 1981 version. Bake for 25-30 minutes, until the cakes are well-risen and have shrunk slightly from the sides of the tin.
