THIS is how to do Tequila. I’m J Highland, and for over 30 years, I’ve been deeply immersed in the captivating world of Tequila, Mezcal, and other agave spirits. Nestled in the red volcanic soil of the Mexican state of Jalisco are millions of blue agave plants waiting to be harvested, steam-cooked, fermented, distilled, and finally, aged in barrels. In time, the juices from these plants transform into an unmistakable spirit that's enjoyed worldwide. Age: Tequila reposado is most commonly rested in American and French oak barrels. Reposado must be aged for at least two months but no longer than 364 days. There are no size restrictions on the vessel in which a Reposado is aged so they can vary from traditional 220 liter whiskey barrels, to large wooden vats called pipones. The name “reposado” translates to “rested” in Spanish, reflecting the time it takes to qualify as a reposado. Clase Azul Reposado is made with 100% blue Weber agave and is aged for eight months in American whiskey casks. The final product is a smooth finish with notes of hazelnut and vanilla. 2. Our great-great-grandfather, Don Cenobio, founded his first distillery – La Perseverancia – in 1873, in the town of Tequila, Jalisco. Not only was Don Cenobio The first person to export “mezcal de tequila” to the United States, shorten the name to just Tequila, and implement the use of steam to cook the agave (instead of an earthen pit), Cenobio also stated that the Blue Agave was the best agave to use for production. His son, Eladio, took over the family business in 1909 when Don Cenobio had passed away. During his time, Don Eladio brought the nectar of the gods to the world, under various names such as Mexican brandy, Mexican whiskey, tequila, and as an aperitif. During the Mexican Revolution, Eladio helped to establish tequila as the national drink of Mexico. He also founded the distillery, La Constancia. Don Eladio died in 1946, and left the family business to his son, Francisco Javier who brought about more changes to the industry and made our family’s tequila the most well-known brand in the world. The single most important thing that Don Javier did for the industry was to help establish the Denomination of Origin for Tequila. Don Javier bought a piece of land in the town of Tequila so he could build a hacienda on the highest point of town, overlooking his rival’s distillery. On this land sat a small distillery, which Don Javier named La Fortaleza.When sipped, the balanced flavor profile includes notes of agave, olive, butterscotch, vanilla, oak, and minerals. It’s not recommended to use it as a mixer as its high quality and delicate flavors could be overshadowed by mixers. Fortaleza Reposado facts: Tequila may not be the first drink that's associated with the holidays, but the Fortaleza Reposado 2021 Winter Blend has the qualities of a seasonal favorite. Aged in American and French oak barrels that once stored Marsala wine, this limited annual-release Tequila has an outstanding aroma of sweet creamed butter, dried fruits and cinnamon bark. In the colder weather I've been drinking more aged tequilas, and I must say, I may even prefer this to their blanco, and that's saying a lot. I'm not normally a huge Repo guy, but this can make you a believer fast. This is WORLD CLASS REPOSADO, and I have NEVER found a better tasting Reposado than Fortaleza Reposado. I highly recommend it. I just bought 4 bottles to get me through most of the winter.
