As I have already mentioned many a times in my previous posts that rice-based dishes, especially like a pulao or fried rice, are my go-to recipes. These are absolutely hassle free, get done in a one-pot set up and super delicious. What better way to bring the wholesome beetroot and rice together, than this Beetroot Rice recipe!

At home, I usually make this Pulao either with mixed veggies or just one veggie. However, in this Beetroot Rice recipe, it is the beetroot which is quite the highlight of the entire dish. Since it also uses curry leaves and mustard seeds, the flavor is more of South Indian. So, at the end you can also sprinkle some fresh grated coconut on the rice.My kids’ never liked beets until I introduced them to this rice. Mildly flavoured with mint leaves and whole spices, this dish also has some green peas & potatoes added to it for a sweeter flavor. In this beetroot rice, I have added few spice powders which gives medium spicy taste. But occasionally I do make mild beetroot pulao without any spice powders. I will share that recipe sometime in future. Blend the beetroot in a food processor or blender until completely smooth, then add the eggs one at a time, whizzing between each addition. Pour in the oil and process until smooth; it should be a beautiful shade of pink. To make it in an electric cooker, perform the saute steps in a pan and then transfer to a electric cooker along with rice and water. Cook on the rice mode.

If you want to keep your rice cakes low syn, you could eat them plain or buy ones with a topping on them already such as the Kallo chocolate organic cakes, but if your looking to make your plain rice cakes a little less boring, we've got some great low syn topping ideas below.

Mix the rice flour, ground almonds, bicarbonate of soda, cocoa powder, sugar and the contents of the liquorice tea bags in a large bowl. liquorice to decorate, such as shoelaces for the legs and web and soft chewy liquorice rounds for the spiders’ abdomens

Step one - Melt your butter in a saucepan then add in your marshmallows and stir until they have melted. At the end, I have added fresh mint leaves along with coriander leaves. Addition of mint leaves is optional, But if you can I would highly recommend. The addition of lemon juice balances the sweetness of the beetroot. This both combined gives the perfect taste and flavor. Cook the basmati rice ahead of time and let them cool down slightly. So rice grains will have some time to firm up. So while mixing later on, they will not break or will not get mushy.To make the recipe in Instant pot, follow all the steps on the saute mode and pressure cook for 6 mins. Wait for natural pressure release. If you do not have a cooker then just make it in a pot. Bring the water to a boil and cook covered on a low heat until done.

Pour into the prepared tin and bake for 35-40 minutes, or until a skewer inserted into the centre of the cake comes out clean and the top of the cake is firm to touch.Step three - Now place the mixture into a prepared greased baking tray and push the mixture in, allow it to cool in the fridge till they become solid before you cut them into squares. Hands down, this has been the birthday cake of choice for many a year in our house. The beetroot is undetectable in this recipe, but what it brings is an earthy sweetness and it contributes beautifully to the finished texture of the chocolate cake. In truth though, this is also the easiest cake you will ever make, simply combining wet ingredients into dry. The liquorice spiders were my youngest daughter Dot’s idea – she’s a fan of the Liquorice Allsort. Her big sister Ivy was around to enact her wishes and was under strict instruction to give each spider proper spidery fangs. Timings
