A three year old single malt matured in a combination of first fill bourbon casks from Heaven Hill and some STR (shaved, toasted, recharred) Portuguese red wine casks, Dream to Dram has been bottled at 46% without colouring or chill filtration.

One of the things I love about new distilleries is that they’re more likely to be owned by smaller entities, meaning they’re more likely to be open about their production processes. There are regular announcements of capacity increases and new facility developments – the bigger boys are not going to let the new upstarts corner the market. There is a real harshness to the nose and the palate, and not much in the way of balance: a couple of flavours came through strongly out of a somewhat jumbled mess. Creamy toffee and vanilla pods sit with tinned apricots and peaches whilst milky breakfast cereals are joined by crumbly shortbread.This cask profile has been designed to suit the fruity, complex and light spirit which has been meticulously produced. Producing really elegant whiskies, this Lowland producer was established in 2014 and is owned by the Wemyss family, famous for their excellent range of blended and independent bottling whiskies.

It strikes me that the Kingsbarns distillery is a tourist attraction first and foremost, which has influenced the decision to release a whisky as soon as possible.
