Amaranth flour is a specialty flour derived from the amaranth, a plant native to Mesoamerica that’s cultivated throughout North and South America. The small, light tan colored seed is cooked similarly to rice and oats and eaten as a pilaf or porridge. Spanish conquistadores banned the Aztecs from cultivating amaranth grain, but it survived until interest was revived in the 1970s because of their nutritional benefits.

Though it may feel like amaranth just hit the food scene, this grain was a staple food item in the Aztec diet. Amaranth flour provides an easier and, to some tastes, a more palatable way of incorporating this highly beneficial food into the diet than the grain itself.
