The proposed certification of organic salt, under discussion in Brussels, allows too wide a range of industrial production techniques according to salt workers and salt producers. The seawater carries on its journey until it has evaporated enough and only the natural grey salt crystals are left behind. These crystals are raked up by hand. The people here in Le Guerandais region have made their living this way, in harmony with their environment, continually for many centuries. Coarse grey salt is also extremely suitable for an unusual cooking method: cooking in a salt crust. This consists of enclosing fish, poultry or vegetables in a mixture made of damp coarse salt, egg whites and sometimes herbs. Cooking is on a medium heat in the oven, for at least one hour, to give an unparalleled moistness and concentration of flavours. TRADYSEL grey sea salt (link to product) is recommended for this type of cooking. At a certain point in the year the conditions become just right for the salt to crystallise on the surface of these lagoons, rather than at the bottom. This is the time that the skilful "Plaudiers" carefully gather up these delicate salt crystals. This is the origin of the precious Fleur de Sel.According to local legends, a Viking band arrived in Guerande in 919 determined to pillage the city. The Guerandais apparently took refuge in the collegiate church praying to St Aubin who apparently sent a sign giving courage to the locals who took up arms and drove out the invaders. About half of the remaining megalithic monuments of the Département Loire-Atlantique, is located on the Peninsula, which makes it an important area for Prehistory. It is now known that these structures date from around 5200–2200 BC. Our Celtic salt carries a certification from Nature and Progress, a French organic and environmental standard, which ensures its purity, quality and sustainability. Our Guerande salt has carried this certification since 1989.Every Friday in July and August, the Saint-Aubin collegiate church hosts the La Voix des Orgues music festival with various concerts. To enable production in the salt marshes, it is necessary to have shallow crystallisation ponds, of small size to avoid ripples, which if there is wind, would cause the flower of salt to sink.

When a salt crystallises over a long period of time, it becomes hard and pure. When the crystallisation is recent, the grain is crumbly, porous and moist. The other elements contained in the moisture are trapped when it dries. Human organisms can ONLY absorb Bio-available minerals, meaning minerals which have been FIRST digested by a plant or animal (Prof Maurice Jaubert). The minerals and trace-elements in the Celtic sea salt are Bio-available which means they can be ABSORBED by the body.Charming medieval city, Guérande takes place in the heart of the Pays de la Loire, in the department of Loire-Atlantique. Surrounded by salt marshes that have made its reputation, the town is located about fifteen kilometers from Saint-Nazaire, not far from the shores of the Atlantic Ocean. Unlike refined industrial salts, Guérande Salt does not undergo any form of washing or chemical treatment, and nothing is added (anti-caking agent, flow improvement agent, fluorine, iodine or nitrite). All of Guérande Salts that we sell are organic sea salts - 100% natural. In tests this Celtic salt has been shown to contain approximately 70% sodium chloride, leaving approximately 30% to be other minerals etc. This type of salt contains all the natural minerals that occur in the sea. Nothing is removed. It is said by some that even the act of grinding the salt can cause the loss of certain gases from inside the crystals. (from - Seasalts Hidden Powers by Jaques De Langres) Salt forms part of many religious ceremonies and is a sign of hospitality when it is placed on the table. We've come a long way. Considering using explosives for an organic label, that's not what you dream about," Christophe Annaheim pointed out. Based in Guérande, Mr. Annaheim is a salt worker who chairs the Association Française des Producteurs de Sel Marin de l’Atlantique (French Association of Atlantic Sea Salt Producers), comprised of nearly 600 skilled workers. He anticipates the proposal's final version, due by the end of 2022, with a heavy heart. "We must remain vigilant because each state will want to amend the text before the European Parliament votes." Whilst flower of salt cannot be produced by heating brine in an oven, after long periods of hot weather, when the clay bed is as hot as the water, our salt works produce a great deal, as the coarse salt no longer crystallises and the salt marshes are covered with flower of salt.Former, the town of Guérande has experienced a dwelling since prehistoric times, and the one that today is called the Guérande peninsula alone has nearly half of megalithic monuments remaining in the department. But we must wait until antiquity for the city to exist as such, including the presence of several farms. The activity of salt marshes, but also viticultural, began during the Middle Ages, in the fourteenth century, and made the city famous over the centuries. In 1840, following the creation of the National Historical Monuments commission, the church's true value was realised and it was listed. The works undertaken by the architect Bourgerel were overly ambitious and caused the collapse of the west front in 1876. It was Eugène Boismen who was charged with reconstructing it in the original style.
