The blend of botanicals used for their gins consists of juniper, coriander, orris root, angelica, orange peel, licorice, and a few others. They infuse their Classic Gin with violets to try to resemble the Parma Violets sweets as closely as possible. Managing director of Zymurgorium, Aaron Darke added: “We have heavily invested in state of the art production and bottling facilities, so increased capacity and the SALSA accreditation will enable us to reach out into new markets, provide volume and due diligence side by side. We’re having some very interesting conversations at the moment and hope to be able to announce new partnerships very soon.”

One of Belfast’s most iconic bars is The Crown Bar, opened in the 1800’s they have been serving gin ever since. The Victorians loved gin and frequented lavishly decorated bars, called gin palaces, which specialized in the serving of gin which was served with tonic water as it was believed to have health benefits. Gin palaces like The Crown are a part of the UK’s drinking history, and as a grade A listed building with original features to enjoy The Crown is a great way to experience that history. The ERS awards encourages employers to support defence and inspire others to do the same. Zymurgorium is an artisan distillery in Manchester, which was founded by Aaron Darke. He began brewing for his friends at university, where he studied microbiology and zoology. It was there that he decided to combine his love for all things botanical and scientific by embarking upon his first entrepreneurial adventure with Darke Crafts in 2012, setting up his business in his mother’s shed in Northern Moor. Zymurgorium prides itself on experimenting with flavors and striving for great new tastes in all sorts of drinks and food products. These products range from cheeses to syrups, to crafty beers and gins. This luxurious gastropub has the perfect gin serves for you whether you are looking for a sophisticated night out or a relaxed Sunday brunch. Enjoy gins from Northern Ireland producers such as Copeland and Jawbox in a variety of flavours. Or try something from the global gin scene such as Malfy (from Italy), Gin Mare (from Spain), or even Roku Japanese Craft Gin (from Japan). The products that mostly feature on our brewing side will be Meads, with a few crafty Beers and Ciders sneaking

This gin is really sweet and is therefore amazing for drinking neat. You could also create a sweet ‘Pamplemousse spritz’ with this gin if it’s mixed with Aperol and pink grapefruit soda garnished with some grapefruit. The Made in The North West Awards looks to showcase the quality products and services that manufacturers across the region produce.

Though, if you want to make sure you secure a booth, booking is advised. The parma violet is so popular due to the well-known British sweets from Swizzels Matlow called Parma Violets. Gins that use the parma violet often try to resemble the taste of these popular British sweets as closely as possible. The taste of violet is well balanced with the taste of juniper berries which a gin is supposed to taste like. It’s not too sweet, but sweet enough to make a nice summery variation to a gin and tonic. Boë Violet Gin Zymurgorium, the first registered distillery in Greater Manchester was awarded the Food and Drink award at the inaugural Made In The North West Awards 2020.

Since then they have expanded to 15 different gins ranging from blood orange & cranberry gin to chocolate mint gin to coconut and lime gin. Here, the choice between tanginess and sweetness is yours to make, as both are combined in Zymurgorium’s Forced Darkeside Rhubarb Gin Liqueur. The only thing they have to keep in mind is that the predominant flavor in a gin has to come from the juniper berry (if you want to know why that is, we explain that in this article). Other gins might make use of more unique botanicals like ginger for example which will create a different flavor pallet compared to a more standard gin.
