Salt– A pinch of salt in sweet baked goods is always a good thing. You can’t (shouldn’t!) be able to taste the saltiness, it’s there to help bring out flavour. Non-dairy milk - Use an unsweetened one if possible and definitely soy milk if you can, though any will work. I favour soy milk for baking as it has the highest protein content. Ready to serve! The Madeleines are ready when they are golden on the surface and have the signature hump. Unmold straight away so they don’t continue cooking. Dust with icing sugar and serve immediately, while hot! These vegan Madeleines took quite a bit of testing to get right, but I think I've finally nailed It!

The rolled edges found on most bakeware introduce a difficult-to-dry space underneath the rim, and the edges themselves can be difficult to coat. We decided to leave the edges of our bakeware unrolled, removing the risk of water traps and uncoated carbon steel edges that might rust – making them completely dishwasher safe. Should you invest in a new madeleine pan if you have one at home? This is a great question. You might have an old, vintage madeleine pan from your grandma! Plain flour - just regular plain (all-purpose) flour. I haven't tested making these gluten-free. I suspect that a gluten-free flour blend would work, but you may need to add a little extra milk to compensate. If you don't chill everything properly, and if your oven isn't hot enough, then you will end up with flat Madeleines. (They will still be tasty though!). Can I Freeze These Vegan Madeleines?: Sugar– Caster / superfine sugar works best here because it dissolves more easily into the batter. However, granulated / ordinary white sugar will work ok too;Add everything else except butter:Add salt, oil, milk, honey, vanilla and lemon. Mix until combined. You don't need to spread the batter out, but try and make sure that it follows the shape of the mold, rather than just sitting in a round blob.
