Description

We have added the optional addition of a little sugar in the recipe below to help counterbalance the tartness of the gooseberries, although this is not strictly necessary. Wash gooseberries, top and tail and discard any bruised fruit. Cut the gooseberries in half and place in either a large Kilner/Le Parfait jar or divide the raspberries between 2 (70 cl) saved gin bottles. I use a 1.5 litre gin bottle. If you added more sugar and created more of a gin liqueur with your gooseberries, try it simply poured over ice! Delicious on a hot summer’s day. There has been no summer so far this year in England. May, June and so far in July has been the wettest time since records were started over a hundred years ago. In fact it is raining right now as though it hasn’t rained for a month — simply tippling it down.

The gooseberries will do all the flavoring work, so a regular bottle of London Dry Gin, for instance, would be just fine.Use slightly tart gooseberries in this summer dessert with a delicate vanilla custard and filo pastry Shake every day until the sugar is dissolved and then store in a cool, dark place until you can resist it no longer (leave for at least four months, we usually let steep for 6 months).

Gooseberry gin recipe | BBC Good Food

My great grandfather, the premier tenant within the park at the time, bought the farm at the centre of the estate and the rest as you say, is history. We have continued to farm and manage our picturesque corner of England since then, and more recently have begun to dabble in the wonderful world of spirits! The addition of sweet apple tones down the sharpness of the green berries in this oaty baked pudding Put them in the freezer overnight, to begin to break down the fruit and release the sugars and juices. Bake your own homemade sponge make this trifle extra special. With gooseberry purée and elderflower cordial, it's full of summer flavours I really have no idea about what has gone wrong. I made another batch last summer and I shall not open the sealed kilner jars to filter and decant when next years gooseberries are ripe. Whitley Neill Gooseberry Gin | Inspired by rural England

Fiona Nevile on Fiona’s traditional elderflower cordial recipe Hi Peta, Yes it does ferment a little = that is what you want. Simmering would kill the brew. Using a funnel, add the fruit mush to a clean bottle/jar so that the mix is about half way up the container. The longer you leave it, the deeper and richer the flavour will become, so you could even leave it for a couple of months (so long as it stays nice and cool) and drink it in the early autumn! I am not giving you the amount in cups as gooseberries can vary very much in size, some are really small, some are huge. These berries are less green and will have turned a deeper golden, or even pale red, colour. Do I have to use sugar in my homemade gooseberry gin?
