Known as Lü Dòu Fěn/绿豆粉 in Chinese, mung bean starch is a fine white powder made from mung beans, a type of legume widely used in Chinese cuisine (Think bean sprouts). Bean thread noodles are also known as Chinese vermicelli, bean threads, crystal noodles, and glass noodles. Meanwhile combine the remaining water with the mung bean starch and stir until there are no more lumps. Make the dressing by grating the garlic with a microplane into a small mixing bowl; or alternatively press or finely mince it. I used carrot, cucumber, yellow bell pepper, white radish and pressed bean curd, but you can also add (or substitute) egg (make it into a thin omelette, then cut it into fine strands), red bell pepper (but don't use green because the flavour is too grassy), spinach (blanch it then squeeze out as much water as possible before roughly chopping it) and lightly blanched bean sprouts.Apart from the mung bean noodles and sesame dressing, there are no rules for the other ingredients to use, although you should always have a good mix of colours. These cellophane noodles are a main ingredient in the dishes: miến gà (chicken), miến lươn (eel), miến ngan (muscovy duck), and miến cua (crab). To alter it, replace regular soy sauce with gluten-free soy sauce or tamari, and use fresh lime juice as a substitute for black rice vinegar.

They’re lower in fat and calories than ordinary pasta, but they also don’t provide any fiber or protein to speak of. Give the starch mixture a stir once more and pour it into the water WHILE STIRRING with a rubber spatula. You need to keep them wet (submerged in water) to prevent them from sticking once they hit the hot pan! The seasoning combination in my recipe involves a handful of common Chinese condiments, plus a few aromatics to enhance the taste.They are most often used in maʻa tinito, a dish made with cellophane noodles mixed together with pork, beans and cooked vegetables. Bean thread noodles, not to be confused with rice vermicelli, another type of thin noodles made from mung bean starch, don’t have much flavor on their own, but they do absorb the other flavors in a given dish quite nicely.

There are two ways of cooking these noodles, though these are guidelines; it’s always best to consult package directions and follow them. Serving tips: Once you have the noodles you can use them right away, but for a more elastic texture and clearer noodles, I recommend blanching them in boiling hot water for about 10 seconds until the noodles are translucent again. Shirataki noodles are translucent, traditional Japanese noodles made from the konjac yam and sometimes tofu. So I am thinking laterally here…my daughter in law is coming for dinner and she has so many things she doesn’t like to eat.Add to stir-fries: Add cooked bean-threads (from one or two bundles) to stir-fried vegetables whose crunch provides a good textural contrast, such as snow peas or bok choy. You may find them marketed as mung bean noodles (or mung bean vermicelli), glass noodles, Korean glass noodles (japchae), saifun, or harusame. Use them to add interest to vegetable-packed dishes, and the dish as a whole will offer plenty of nutrients! Made of mung beans, these noodles have a gelatinous thread-like structure and are usually folded into bundles for retail distribution. The tofu puffs themselves are airy, perfectly flash fried in the package and taste like restaurant quality.
