Deze donkere, fluweelzachte Guinnesscake is een perfect cadeau voor papa, als hij je weer eens van een nachtelijk feestje heeft opgehaald. i'm not sure how i feel about this one yet. it really tastes like coffee, and that's disconcerting to me. i like coffee when it is a liquid, but i have never liked other coffee-flavored things. i only had one bite; i gobbled too much of the other one and filled up i will test it and take the bite-shot later; i still have to eat dinner, after all...but tomorrow, all will be revealed! Included also are recipes for a Gluten-Free and Egg-Free cake which can be tweaked with flavour and topping to suit.

i didn't have any fresh cherries, and they're out of season anyway, so i just used a chocolate-covered cherry, which i did have on hand I tried this recipe with some baking powder, and it does work and make it more fluffy, but personally I wanted a denser and more gooey cake. You can add in 1/2 tsp of baking powder, but its entirely optional. I used self raising flour as I preferred it to plain, and then thats enough raising agent for me. The measurements are a difficult thing I find because peoples versions of ‘one tablespoon’ can vary in weight SO VERY MUCH so I have put weights as well. 15g is typically a level tablespoon weight, so don’t do heaped.. it might not turn out as good! If you want to do more than one, add on 30 seconds or so if microwaving at the same time. Mine took about 100 seconds to do two. no mug cake in the history of the universe was ever eaten as rapidly as this one. holy moly-this is DELICIOUS! i want to make this every day of the week for the rest of my life. an apple a day, after all... it's a shame, because i was really looking forward to using the blowtorch. i will try again tonight, and then make one just for today.Cult Mug Cakes include your classic cake flavours, like Vanilla, Lemon and Orange cakes. I couldn’t wait to try some recipes from the Ultimate Mug Cakes section, with its Marshmallow, Coconut-Choc and Nutty mug cakes. Another whole part of the book is devoted to Chocolate Specials, such as the Chocolate Fondant, Salted Caramel and Nutella (highly recommended!) Mug Cakes, truly catering to the chocoholics among us, while the Mug Apple Crumble, Green Tea Mug Cake and Blueberry-Ricotta Mug Cakes appeal to those who prefer some Tutti Frutti flavours. No cake is complete, of course, without a topping of something delicious. Knudsen provides some ideas for your final mug cake layer, including sauces, icings, coulis mug cakes, and Chantilly. since march hath 31 days and this cookbook hath 40 recipes, here are the ones that didn’t make the cut:

I did think that even though these cakes are so gooey already, that they needed a little more oomph. One of my favourite things at Easter was to add a frozen creme egg in the middle of the mug and it was so ridiculously yummy I couldn’t cope, but I never got round to posting it in time. So, as Easter is now long gone and all the treats are out of the shops again… I thought why not just use some actual chocolate?! One of the best things about this recipe? It can so easily be made dairy free, and vegan. Honestly, I’ve tried several vegan versions, and they’re just as good. The first time I started making these I was attempting to be dairy free to see if I had an intolerance, and I was heartbroken I couldn’t have one. However, soon after realising I already didn’t include butter, and my cocoa powder is dairy free… why not try a different milk?! Tip, ook voor ovenbakkers: neem kartonnen koffiebekers in plaats van mokken of een muffinvorm. i was surprised at how much this one tasted like coke/cherry coke. but i'm running out of room AGAIN, and still one to go, so i have to shhh.

Ook weer zo’n tegenstrijdigheid. this one was really really good. i didn't have high expectations; i thought it would just be another not-chocolate dried fruit cake, and who needs more of those, right? but this is a keeper. it's the gooiest thing ever, and it has dates in it, so it's practically a health food. i am loopy with month-long sugar high, so lemme just say how much fun this project was, and i hope it was enjoyable for youuuu people, too, and that it inspires you to make many mug cakes of your own and share your pictures with me please! i took friday off from mugcaking because i wasn't feeling well, so i made these both yesterday, at the same damn time. and because they were both rowdy-ice cream melting, caramel dripping-the photography was more frenzied than usual, so i neglected to take my trademark bite shots. sorry for breaking our traditions! i will try to remember better tonight!

Mug Cakes, by Lene Knudsen, is a cake lovers dream. The book, based on the American invention, offers recipes for delicious, individual cakes that’ll melt in your mouth and, best of all, are ready in 5 minutes, all prepared in – you guessed it – a mug. no new cakes, but i added some pictures of mugs that were too problematic to use for this project, as promised (a long time ago, but whatever)** but once you frost it and roll it in frosting and coconut and doll it up all nice, you'd never know how unstable and porous it is underneath then, i transferred it to my personal favorite (glass) mug, which is NOT microwave safe 'cuz it's got too much bling. foiled again by foil. You can add in 1/2tsp baking powder if you want it to be more light and fluffy, but it can raise up a lot more and explode over the edges!which is Karen's March project! See above for more pictures of mug cakes Karen has made than you will even believe is possible, for which my family are eternally grateful. Inspired by this (and who wouldn't be??!) I actually took out five Mug Cake books form the library and for the past three days (since it is Spring Break here) the mug cake baking has continued almost unabated. Sometimes there has many as ten people here (smaller people, let's just say) making all manner of concoctions in mugs. Med in a microwave, yes, so instant gratification!

so basically, all this spanish fanfare is just for ONE final cake, which i didn't have the room to post in the last review space. boooooooo. it was a lot better than it looked - these cakes are so vulnerable out of their mugs. #slugsnotsnails believe it or not, coming from someone who has never given a shit about red velvet anything before, this one is a new favorite. the frosting was just the right amount of sweetness for the not very sweet cake, and it was just warm and gooey and wonderful. even sean of the house loved it, and he has similar (although more rudely expressed) opinions about red velvet cake. so glad i changed my mind and made this one. okay, so i caved and bought crystallized ginger after all. this recipe calls for "candied ginger in syrup," which as far as i can tell is not something that exists/has ever existed anywhere, so i made my own with crystallized ginger and ginger syrup, and it turns out that the only thing cheaper at whole foods than my local grocery store is crystallized ginger, so whee! not only terrifying, but also tasty. i'm just going to make mugs of ganache on a weekly basis from here on out.and again - more burny than i like, but still tasty and fun and much better than the microwave essplosion of last night You can EASILY make this vegan, by using dairy free dark chocolate in the middle, and using almond milk. also, i'm not sure if the message here is "readers are whores" or "readers are lonely and desperate for attention"
